March is finally here! Those last couple of weeks of February were brutal, so the start of the month that brings the first day of spring is a welcome sight!
It’s definitely a “transition” month here in Tennessee, so we’re bound to experience plenty of rollercoaster weather — and already have! The temperatures climbed into the 60’s yesterday and and it felt oddly humid, only to be followed by 30 degrees and sleet and snow today. It’s a fun ride!
March also brings St. Patrick’s Day and a fascination with all things green. Given my love for holidays, I enjoy eating extra “green” or Irish foods and making green-tinted treats around March 17. Now, however, I don’t reach for green food coloring to make it happen. Artificial dyes are full of all kinds of junk we shouldn’t put in our bodies, but the good news is there are plenty of natural ways to achieve a green tint in food!
McDonalds’ Shamrock Shake has gained popularity in recent years as a St. Patrick’s Day treat and I can understand why. It’s tinted a lovely light shade of green and boasts a refreshing mint flavor. As a diehard lover of mint (especially mint chocolate!), I love that many St. Patrick’s Day treats incorporate mint flavors because of the association with the pale mint color. It certainly makes my taste buds happy!
But the original “Shamrock Shake” is full of junk that I don’t want to ingest. So I created this nutritious smoothie that achieves a yummy mint flavor and a lovely green tint thanks to the addition of nutrient-dense spinach! It’s a great way to sneak some good fats and extra veggies into your life and it’s so good you’ll want to make one year round. Enjoy!
